Authentic Cuban recipes are served up from the melting pot of traditional recipes from the continents of South America, Africa, North America and Europe. Cuban cooking combines these cuisines to produce a tasty, flavor rich, unique style of combining of recipes and ingredients, cooking and serving these recipe treats.

Typical Cuban dishes served often include black beans or redbeans, white rice, yellow rice, citrus marinades, garlic, and fried sliced banana (plantain). Olive oil and garlic marinades are often used as sauces. Meat is often prepared roasted and in a "creola" style marinade.

In Cuba, cooking Cuban foods with traditional Cuban recipes as it was and as it is, there are two things that are not often seen: creams and milk products and cheeses in heavy sauces. These products, popular in Europe and North America, are expensive to purchase and often difficult to store in Cuba while pork and chicken are relatively plentiful, fresh and inexpensive. We do, however, have a couple of genuine island favorites which include cheeses.

We strive to provide recipes including the foods enjoyed by the average Cuban families, seen every day as we may travel about the beautiful countryside of Cuba.

For convenience, we often suggest the use of prepared foods such as canned beans, canned tomatoes, dried beans and frequently we suggest low-fat chicken broth. We use dried/dehydrated spices and dried fruits. We always prefer fresh vegetables, but frozen, defrosted, are great substitutes. We often take liberties in these Cuban recipes with Worcestershire sauce, catsup and things such as celery salt, all of which are not often seen on the island in those forms. Some of these Cuban foods are difficult to prepare outside of Cuba or areas with a large Latin community due to authentic ingredients not being available. Here, we suggest commonly-available substitutes.

Ajiaco, a thick soup made with pork along with different kinds of edible vegetable roots and stems, is the national dish of Cuba. The taste depends on the vegetables and the seasonings chosen on that day by the cook. Other typical Cuban dishes include:

bullet Congrí - a combination of rice and red kidney beans.
bullet Frijoles Negros Dormidos - very thick cooked black beans.
bullet Lechón Asado en Púa - broiled pork cooked on a skewer over an open fire.
bullet Moros y Cristianos - white rice and black beans.
bullet Picadillo a la Habanera - a mincemeat dish Havana style.
bullet Pollo a la Barbacoa, barbecued chicken cooked over an open fire.
bullet Tachinos, Chatinos or Tostones - fried unripe sliced bananas.
bullet Tamales, Bacanes or Ayacas - tender kernel corn in corn meal wraps.
